ALU VADI

 

 INTRODUCION

 Alu vadi is snacks as well as part of Maharashtrian thali. These are steamed and then deep fried to make delicious alu vadi. making process of alu vadi is very simple.



INGREDIENTS

·       2 cup of besan/chicks pea flour

·       2 tbsp rice flour

·       ¼ turmeric powder

·       Salt

·       1 bunch of alu leaves/Colocasia leaves

·       Water

·       Oil for frying

·       2 tbsp white sesame seed

·       ½ tbsp oil

·       2 chillies,4 garlic piece

·       1 tbsp cumic

·       Coriander leaves

PROCESS

Step 1: take besan in a bowl. Cumic, garlic and chillies ,coriander leaves make the paste. add rice flour, sesame seed, turmeric powder, salt add paste mix well.

Step 2: add little water at a time and make a little thick paste.

Step 3: consistency of batter should be neither to thic nor thin. It should easily spread. Batter is ready.

Step 4: wash and dry alu leaves. Take biggest as base leaf, take the batter and spread it evenly all over the leaf.

Step 5: take a smaller leaf and put it above the first leaf. Spread the batter again over it.

Step 6: you can use many leaves as you want.

Step 7: fold the base part of the leaves first and spread the batter on it again. Fold the side spread the batter on it. Start making the roll.

Step 8: like wise you can make the rolls.

Step 9: take a cooker add water at base of the coocker. take a pot and place the base of the cooker.

Step 10: grease the dish really good with oil and place it on the pot.

Step 11: put the rolls on the dish close the coocker lid. Steam on high flame and take two whistle.

Step 12: let it cool down and cut it into small pieces.

Step 13: heat up oil drop the vadi into oil and fry until it turns nice raddish from both side.

Step 14: take alu vadi out of oil and alu vadi is ready.

NOTE

§  Batter should be thick it should consume less oil.
